Chilworth Manor Classic Cuvée The Bishop 2019 - Case of 6
The 2019 vintage is gold in colour, with dried apricot and fresh quince on the nose. The palate is complex and generous, offering notes of stone fruit, nuts and pastry, with a long, refined finish shaped by five years of lees ageing. It pairs beautifully with poultry or fish in sauce, and is equally enjoyable on its own - perfect for your Christmas aperitif!
We named this traditional method sparkling wine 'The Bishop' in honour of Odo, the Bishop of Bayeux and former owner of the Chilworth Manor having been gifted the estate by his brother William the Conqueror!
Appointed Bishop of Bayeux in 1049, Odo is also credited with commissioning the great Bayeux Tapestry following the Norman Conquest and Battle of Hastings. The historic 70 metre long tapestry is due to go on display at the British Museum in Autumn 2026 - this will be the first time that the tapestry has been shown in the UK since it was made.

The Bishop is blended from 49% Pinot Noir, 40% Chardonnay and 11% Pinot Meunier. Having undergone a second fermentation in bottle as part of the Classic Method of sparkling wine production, this wine has spent over 60 months on the lees before disgorgement.
A later start to the growing season than 2018, kicked into life with an incredible period of flowering and fruit set. A far more challenging and unpredictable summer followed however so the decision was made to radically thin out our fruit during green harvest so as to maximise quality and potential ripening of the remaining bunches. With copious amounts of rain (and then a day of frost!) in the run up to harvest we worked closely with our winemaker monitoring ripeness and acidity levels so we could pick at the optimum time. Our patience and thoroughness was rewarded with a fantastic crop as good as, if not better than 2018 which was widely considered a landmark vintage in the UK.

We will deliver the goods to you as soon as reasonably possible and usually within 2-5 working days after the day on which we accept your Order. Such timescale remains dependent on availability of the Products and the delivery address.
Please note we are currently only delivering to mainland UK addresses. The delivery charge quoted above is applicable to UK mainland only and exclude the Scottish Highlands and Islands, Northern Ireland, The Isle of Man, The Isle of Wight, The Scilly Isles and the Channel Islands. If you require delivery to the Highlands or Islands, this can be arranged but the costs will be substantially higher. Please contact us to arrange a quote before placing your Order.
Collection is available on Thursday or Friday between 10am - 4 pm. If you select this option, please bring your proof of purchase with you (or take a note of your order number). When entering the drive to Chilworth Manor, please pass the house on your left and follow the road signed to the vineyard towards the right. The Cellar Door is in the first building at the bottom of the vineyard.
